Start by placing the minced meat in a bowl, adding Dangote salt, Dan-Q beef seasoning, black pepper, garlic, ginger and garam masala. Then drizzle a little bit of olive oil on the meat and mix together. Roll the mixture into fat fingers and put them into a frying pan with a tablespoon of olive oil on low heat and turn over when golden brown then set aside.
Place the tomatoes into a food processor, add the minced ginger, garlic, chopped spring onions, chillies, coriander stalks, turmeric, honey, curry paste and coconut milk, then blitz until combined and smooth. Pour the mixture into the kofta pan, bring to the boil for five minutes and season again if need be. Can be served with boiled white rice or naan bread.
